Ingredients
- 4 cans 10 1/2 oz.low sodium chicken broth or homemade
- 1 c. thinly sliced carrots
- 1/2 c. chopped onion
- 1/2 tsp. parsley
- 1 garlic clove minced
- 1 pkg. 9 oz refrigerated uncooked cheese tortellini
- 1 cup frozen cut leaf spinach thawed or 2 cups chopped fresh kale
Preparation
Step 1
In 4 quart saucepan or dutch oven, combine broth, carrots, onion and garlic. Bring to boil over high heat. Add tortellini and boil gently 4-5 minutes or until tortellini is almost tender.
Step 2
Add spinach or kale and reduce heat. Simmer 3-4 minutes or until tortellini is tender, stirring occasionally.
Chopped cooked boneless skinless chicken breast can be added.
