Ingredients
- 2 slices cut up bacon
- 2 c. chicken broth or stock
- 1/4 c. finely chopped carrot
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 2 c. milk
- 1/4 lb. Italian sausage links cooked and sliced
- 1 medium chopped onion
- 2 c. diced potatoes
- 1/4 c. finely chopped celery
- 1 tsp salt
- 2 lb. fresh chopped spinach or kale
- 1/2 c. snipped parsley
Preparation
Step 1
Cook and stir bacon in 3 qt. saucepan until crisp. Remove bacon and drain; reserve fat in saucepan. Cook and stir onion in fat until tender. Stir in broth, potatoes, carrot, celery, salt, thyme and pepper. Heat to boiling and then reduce heat. Cover and simmer 30 minutes.
Step 2
Stir in half the spinach or kale, cover and cook 2 minutes. Stir in remaining spinach/kale, cover and cook just till wilted about 2 minutes. Stir in sausage, milk, parsley and bacon and heat till hot.
Sausage can be omitted
