Linguine with Fresh Tomatoes and Tofu

Ingredients

  • 1 lb. linguine
  • 4 large ripe tomatoes cut in chunks
  • 1/2 c. fresh basil chopped
  • 3 TBS olive oil
  • 2 TBS minced garlic
  • 1/2 tsp each salt and pepper
  • 1 pkg. 14 oz firm tofu drained and patted dry and cut in 3/4 in cubes
  • 1 bag 10 oz fresh spinach coarsely chopped

Preparation

Step 1

Cook pasta in a large pot of lightl salted boiling water as package directs. Drain and reserve 1/3 c. cooking water. Return pasta to pot.

Step 2

While pasta cooks, stir tomatoes, basil, 1 TBS each oil and garlic, salt and pepper in a bowl to mix. Heat remaining 2 TBS oil in a large skillet over medium high heat. Add tofu and saute 4 to 5 minutes till lightly golden. Add remaining 1 TBS garlic and saute 30 seconds until aromatic. Add spinach and 1 TBS water. Cover and cook 2 to 3 minutes until wilted.

Step 3

Toss pasta with tomato and tofu mixture 1/3 c. reserved cooking water to loosen pasta. Serve sprinkled with parmesan cheese.
