Peanutty Granola

Ingredients

  • 3 cups old-fashioned oats
  • 3/4 cup peanuts
  • 1/2 cup brown sugar
  • 1/2 cup raw pepitas
  • 1/2 cup coconut
  • 1 tbsp vanilla
  • 1 tsp mexican cinnamon
  • 1 cup honey
  • 1/4 cup butter melted
  • 1/2 cup raisins
  • 1/2 cup cranberries

Preparation

Step 1

Heat oven to 350°F.

Step 2

Combine first 7 ingredients in large bowl. Add honey and butter; mix well. Spread into 2 foil-lined 15x10x1-inch pans.

Step 3

Bake 30 min., stirring every 10 min. Stir in raisins and cranberries. Bake 5 min.; cool completely.

Step 4

Break into bite-size pieces.
