Sauteed Sweet Potato

Ingredients

  • 5 sweet potatoes
  • 2 potatoes
  • 1 package duck confit thighs or breasts (3 legs for about 4 people)
  • garlic
  • cilantro
  • red onion

Preparation

Step 1

Fry the thighs to remove the fat and place on paper towels. Boil a pan of water. Peel and cut the potatoes. Cut the garlic, the bouquet of cilantro and red onion. Remove the duck skin and crumble.

Step 2

Fry the duck with chopped fresh cilantro, garlic and red onion (5 minutes on high heat) remove the potatoes from water, drain and mash. Assemble, duck first and then puree. You can add a sprig of fresh coriander for decoration.
