Ingredients
- 4 (4 oz) salmon fillets, skin removed
- 1 tbsp lime or lemon juice
- 1/2 cup panko breadcrumbs
- 1/4 cup flaked sweetened coconut
- salt & pepper
- cooking spray
Preparation
Step 1
Preheat oven to 425 degrees.
Step 2
Place salmon on a nonstick baking pan. Brush lime or lemon on salmon.
Step 3
In a shallow dish, combine panko, coconut, salt, and pepper. Dredge each fillet in the mix and return to pan. Spread leftover crumbs over fillets. Coat with cooking spray.
Step 4
Bake for 12-15 minutes, or until golden brown.
