Ingredients

  • 4 large potatoes, peeled and cubed (or mashed potatoes)
  • 1 tbsp butter
  • 1 tbsp onion, finely chopped
  • 1/4 cup shredded cheddar cheese
  • salt and pepper to taste
  • 5 carrots, chopped
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 lb lean ground beef
  • 2 tbsp flour
  • 1 tbsp ketchup
  • 1 packet brown gravy to one cup water (or 1 cup beef broth)
  • 1/4 cup shredded cheddar cheese

Preparation

Step 1

Bring pot of water to a boil and add potatoes. Cook until tender but firm- about 15 minutes. Drain and mash. Mix in butter, finely chopped onion, and 1/4 cup cheddar cheese. Season with salt and pepper, set aside.

Step 2

Boil carrots 15 minutes. Drain, mash, and set aside. Preheat oven to 375 degrees.

Step 3

Heat oil, cook onion until clear. Add meat and cook until browned. Add a splash of steak sauce to this step to add more flavor to the meat. Pour off fat, mix in flour and cook 1 minute. Add ketchup and gravy (or 1 cup beef broth). Bring to a boil, reduce heat, and simmer for 5 minutes.

Step 4

Spread beef along bottom of a large casserole dish. Next add a layer of carrots. Top with potatoes and sprinkle with remaining cheese.

Step 5

Bake 20 minutes or until golden brown.
