Ingredients

  • 2 tsp vegetable oil
  • 1 cup water
  • 4 garlic cloves, minced
  • 1 tsp minced peeled fresh ginger
  • 1/2 tsp crushed red pepper flakes
  • 2 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 2/3 cup chunky peanut butter
  • 1 tbsp light brown sugar
  • 3 tbsp chopped unsalted roasted peanuts (optional)
  • 1 tbsp chopped mint (optional)

Preparation

Step 1

Heat oil in a small saucepan over medium heat. Add garlic, ginger, and red pepper flakes. Cook 1 minute until browned. Add water, soy sauce, lime juice, peanut butter, brown sugar, and roasted peanuts. Stir until thick, about 4 minutes. Remove from heat and stir in mint.

Thin with rice vinegar for a marinade or a dressing.
