Ingredients
- 10 eggs, beaten
- 1 cup milk
- 1/2 tsp dry mustard powder
- 1/2 tsp salt
- 8 hash brown patties, frozen
- 1 lb browned and crumbled breakfast sausage
- 4 cups shredded cheese

Preparation
Step 1
Spray bottom of 9 x 13 pan with cooking spray and line with the hash brown patties (you can break extra hash browns to fit if necessary).
Step 2
Whisk together eggs, milk, salt, and dry mustard powder.
Step 3
Layer crumbled sausage then cheese over hash brown patties.
Step 4
Pour egg mixture over the casserole being sure to get an even coating.
Step 5
Cover and refrigerate overnight.
Step 6
Bake at 350 for one hour, covered. Then uncover and bake another 15 minutes.
Saute diced onions and green bell peppers with the sausage and use half pepper jack or other spicy cheese for a Mexican flair!
