  • 2 cups of shred zucchini
  • 2 ½ cups of white flour
  • ½ cup of cocoa
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • ¼ teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract

Mix all ingredients together and pour in to muffin tins. Bake at 350F for 45 to 60 minutes. You could add ½ cup of coconut….or red cherry in pieces for added flavor
