Ingredients
- (9-inch) pastry crust, homemade OR prepared, baked and cooled.
- 1 1/2 cups leftover turkey meat, cur into bite-sized pieces
- 3/4 cup crumbled blue cheese
- 4 FIRM pears, peeled, cored and diced
- 1/4 cup pecans, toasted and chopped
- 1/4 cup dried cranberries
- 1 cup sour cream
- 3 tablespoons heavy cream
- 1 tablespoon FRESH thyme
- salt and pepper to taste
Preparation
Step 1
Preheat oven to 375 degrees F. Bake pie crust until lightly brown and allow to cool.
Step 2
Combine turkey, 1/2 cup blue cheese, pears, pecans, cranberries, sour cream, heavy cream and thyme in large bowl.
Step 3
Transfer turkey mixture into baked and cooled pie shell.
Sprinkle with remaining blue cheese.
Bake until crust turns golden brown and cheese melts, about 20 minutes.
Step 4
Allow to cool for 20 minutes.
Serve warm or at room temperature.
