  • Brown Sugar 55gm
  • Sliced pineapple 1 tin
  • Glacé cherries 55gm
  • Shelled walnuts 3
  • Cake:
  • Refined flour 200gm
  • Baking powder 1 tsp
  • Salt a pinch
  • Ground cinnamon ½ tsp
  • Margarine 115 gm
  • Castor sugar 140 gm
  • Eggs 2
  • Milk 5 tbsp
  • method 2 Ingredients:
  • ¾ cup Golden Brown or Light Brown sugar
  • ½ cup unsalted butter (1 stick)
  • 1 20-ounce can pineapple rings, drained
  • Maraschino cherries
  • Batter:
  • 1½ cups flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 cup sugar
  • 3 eggs
  • ½ cup (1 stick) melted unsalted butter
  • ½ cup milk

Preparation

Step 1

Spread on bottom of (9”X7”) tin. Arrange well drained pineapple slices on this and fill centers with glacé cherries

Step 2

Cake:
Sift flour, baking powder, salt and cinnamon.
Cream fat and sugar until light and fluffy.
Gradually add beaten eggs to creamed mixture.
Fold in sieved flour alternately with milk.
Pour
(preheat 375 degrees 45mins)
Bake at 2050C or gas 5 for about 40 minutes.
Leave to cool for 5 minutes and then turn out on a wire rack.
Put halved walnuts between the slices of pineapple.
