Ingredients
- Pineapple pieces - 6 cups Sugar - cups Citric Acid - Lemon Yellow Colour - 2 drops Pineapple essence - 2drops
- METHOD 2 Ripe pineapple - 1 kg Clove - 24 no's Cinnamon 1inch piece - 12 no's Sugar - 1 1/2 kg or Citric Acid - 11/2tsp Yellow colour

Step 1
Cook the pineapple pieces with water in a low flame. Stir it continuously with a wooden ladle. While it boils slowly add sugar into it. Boil it well by stirring continuously. To test whether the jam is done, pour some jam on a dry plate. Allow it to cool and tilt the plate. If the jam is ready, it will fall in flakes. When the jam is done, add citric acid, lemon yellow colour and pineapple essence to it. Remove from fire and pour into a bottle. When the jam cools, close the mouth of the bottle.
Step 2
Remove the skin of the pineapple and cut it into small pieces. Use only the soft flesh. Cook the pineapple with 2cups of water and the clove. When it is done, remove the cloves from it and grind the pineapple pieces. Boil it again with the sugar and lime juice. Stir it well. When the content becomes thick, remove from fire and pour it to a clean bottle.
