Ingredients

  • ½ cup margarine, softened
  • ½ cup peanut butter
  • ½ cup dark brown sugar, firmly packed
  • ½ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose (plain) flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Preparation

Step 1

Cream margarine with peanut butter and both sugars.

Step 2

Add egg and vanilla and beat until light and fluffy.

Step 3

Sift flour, salt and soda over creamed mixture and blend well.

Step 4

Mixture will be too soft to handle at this point.

Chill in the refrigerator about 30 minutes (dough should still be soft).

Step 5

Form into balls.
Place on lightly greased baking sheets, flatten slightly.

Step 6

Bake at 350°, 12 minutes.
Let cool on baking sheet for a minute or two, then transfer to wire rack to cool completely.
