Chocolate chow main noodle cookies

Ingredients

  • 12 oz Ghiradelli semi sweet chocolate chips
  • 2 1/2 C crispy chow main noodles
  • 3/4 C salted & roasted almonds, coarsely chopped
  • 1/2 C finely chopped dried mango
  • 1/8 tsp cayenne

Preparation

Step 1

Line a baking sheet with parchment paper. Place the chocolate in a glass bowl over a saucepan of simmering water. Stir occasionally until the chocolate is melted and smooth, about 4 minutes.

Step 2

Combine the noodles, almonds, mango, cayenne and melted chocolate in a large bowl. Stir until all the ingredients are coated with chocolate.

Step 3

Scoop the mixture onto the prepared baking sheet using an ice cream scoop and allow the cookies to harden at room temperature, about 2 hours.

Step 4

Store the cookies in an air tight container at room temperature.

Use scissors to cut the dried mango into pieces
