These breakfast burritos stuffed with potatoes, egg, sausage, and cheese are perfect any time of the day!

Ingredients

  • 1 Pound Ground Sausage
  • 4 Eggs
  • 1 Package Potatoes O'Brien
  • 2 Cups Shredded Cheddar Cheese
  • 1/4 Tsp Garlic Powder
  • 7 Flour Tortillas (Burrito Size)
  • salt and pepper to taste

Preparation

Step 1

Cook Sausage in oven or in frying pan and save drippings.

Step 2

Use 2 Tbsp of sausage grease to cook frozen potatoes. Heat oil, add potatoes and cook for 15-20 minutes until soft.

Step 3

Use 1 Tbsp of sausage grease to cook scrambled eggs. Crack all eggs into a bowl and beat with a whisk or fork until blended. Heat oil, add eggs and scramble until cooked through.

Step 4

Chop sausage, add cooked eggs to cooked potatoes. Add bacon, then cheese. Stir until all combined.

Step 5

Using a 4 Tbsp large ice cream scoop, add 2 scoopfuls of mixture onto tortilla. Fold into a burrito.

For a low fat recipe, you can substitute pork sausage with turkey sausage.

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
