Ingredients
- 1 cup flour
- 1/2 cup sugar
- 4 tsp baking powder
- 3/4 tsp salt
- 1 cup Cornmeal ( the finer the better, I use stone ground)
- 2 eggs
- 1 cup milk
- 1/4 cup butter

Preparation
Step 1
Preheat oven to 425 . Put iron skillet with 3 tbsp. butter in skillet and put in oven
Step 2
Sift together, flour, sugar, baking powder, and salt. stir in corn meal
Step 3
In small bowl beat eggs, add milk and melted butter
Step 4
Add all at one time to flour mixture and mix with fork. Batter may be lumpy that is okay.
Step 5
Pull skillet from oven and pour in batter level off and return to oven. Bake at 425 for 20-25 minutes or until a toothpick comes out clean
