  • 12 bacon strips, diced
  • 12 eggs, lightly beaten
  • Salt & pepper
  • 10 (8 inch) tortillas
  • 1 1/2 cups (6 oz) shredded cheddar cheese
  • 1/2 cup thinly sliced green onion

Preparation

Step 1

In a large skillet, cook bacon until crisp. Drain on paper towels, reserving 1-2 tbsp drippings. Add eggs, salt, and pepper to the drippings. Cook and stir over medium heat until the eggs are completely set.

Step 2

Spoon about 1/4 cup egg mixture down the center of each tortilla; sprinkle with cheese, onion, and reserved bacon. Fold bottom and sides of each tortilla over filling. Wrap each one in waxed paper and aluminum foil. Freeze for up to 1 month.

Step 3

To use: Remove foil. Place waxed paper wrapped burritos on a plate. Microwave for 1 1/2-2 minutes. Let stand 20 seconds.
