These little beauties are low-carb, bite-sized, & delicious. If you want to get your pizza-fix the low-carb way in a couple bites, then you should make these, asap.

  • 10 large egg whites
  • 7 tbsp flaxseed meal
  • 1/4 tsp Italian seasoning
  • 1/4 tsp garlic powder (or more to taste)
  • 1 1/2 tsp baking powder
  • 1 c pizza blend shredded cheese
  • 1/4 c Contadina Tomato Sauce with Italian Herbs
  • 12 slices pepperoni

Step 1

Low-Carb Pizza Bites - Step 1

Pre-heat oven to 410 degrees F. Coat a 12 cup muffin pan with non-stick spray & set aside. In a large bowl, combine egg whites with flaxseed meal, seasonings, & lastly, the baking powder. Whisk together & set aside for a few minutes. It’ll be lumpy & fluff up a bit. Next, pour the flaxseed meal & egg mixture into the greased muffin cups, filling each about halfway full.

Step 2

Place pan into the oven & bake at 410 degrees F. for approximately 15 minutes. They’ll be really puffy when you remove them, but they start to deflate a bit once they’re out of the oven for a minute or two.

Step 3

Now they’re ready for their toppings! I chose to do mine simple, with just a teeny bit of pizza sauce, pinch of cheese on each, & then a pepperoni slice, sprinkled with a bit of seasonings. Add your toppings, then place the pan under the broiler for about 7-8 minutes. The cheese will start to brown & bubble slightly.

Step 4

Remove them from the oven & let the pan cool a bit, then dig in & enjoy! They also store in the fridge well in a tupperware & make a great little snack! I actually really liked it a day after & then warmed up in the microwave for a few seconds… reminded me of some tasty leftover pizza! Yum!!
