Ingredients

  • 1/2 cup bread crumbs
  • 1 Tbsp grated Parmesan cheese
  • 1 tsp dried parsley
  • 2 tsp Dijon mustard
  • 4 chicken cutlets (pounded to a 1/4 inch thickness)
  • 8 thin slices Swiss cheese
  • 8 thin slices lean ham
  • 1 cup cooked spinach
  • 1 egg white, lightly beaten

Preparation

Step 1

Preheat oven to 375F. Spray a large baking dish with cooking spray. On a sheet of waxed paper, combine bread crumbs, Parmesan and parsley. Mix well.

Step 2

Spread mustard evenly over each piece of chicken. Place cheese and ham evenly on top. Spread spinach evenly over cheese and ham.

Step 3

Fold edges of chicken over spinach. Starting with a short end, roll up cutlet jelly-roll style. Secure each roll with toothpicks.

Step 4

Dip cutlets into egg white. Roll in crumb mixture, patting so crumbs adhere. Arrange chicken roll in prepared dish.

Step 5

Bake chicken until cooked through and no longer pink, about 20 minutes. Place on individual serving plates, remove toothpicks. Serve immediately.
