Tortellini with Vegetables

Ingredients
- 1 package (16 oz) fresh spinach tortellini
- 1 Tbsp olive oil
- 2 cloves garlic, sliced
- 1 cup sliced mushroom
- 3 medium tomatoes, seeded and chopped
- 1 cup cooked broccoli
- 1 Tbsp chopped fresh oregano or 1 tsp dried
- 1/8 tsp salt
- 1/8 tsp black pepper
- 2 Tbsp Parmesan cheese (optional)

Preparation
Step 1
Cook tortellini according to package directions, but do not add salt. Drain in a colander. Cover and keep warm.
Step 2
While tortellini is cooking, spray a large skillet with cooking spray. Heat skillet over medium heat. Add garlic, cook for 1 minute. Add mushrooms, cook, stirring, about 2 minutes.
Step 3
Add tomatoes, cook, stirring frequently, for 2 minutes. Add broccoli, cook until crisp-tender, about 5 minutes.
Step 4
In a large bowl, combine tortellini, vegetable mixture, oil, oregano, salt and pepper; toss to coat. Place pasta mixture on serving plates and sprinkle with Parmesan. Garnish with oregano sprigs. Serve immediately.
Prepare in advance:
Serve this dish as a cold pasta salad. Prepare 1 day ahead. Cover with plastic wrap and chill until ready to serve.
