Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 3 tsp cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 tsp vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Preparation

Step 1

Preheat over to 325. Grease and flour two 8x4 inch loaf pans.

Step 2

Sift salt, flour, baking powder, baking soda, and cinnamon together.

Step 3

Cream eggs, oil, vanilla, and sugar together.

Step 4

Add dry ingredients to creamed mixture and beat well. Stir in zucchini and mix until well-combined. Pour into prepared pans.

Step 5

Bake 40-60 minutes until tester comes out clean. Cool in pan for 20 minutes.
