Italian Cheese Cake Recipe that my mother handed down from my grandma Lena in Italy. This Cheese Cake my Kids grew up on and love.

Ingredients
- 2 Cups graham cracker crumbs
- 1/2 Cup of Softened Butter or Margarine
- 16 oz- Riccotta Cheese
- 2 (8 oz) Packages of Cream Cheese - Softened
- 1 Cup of White Sugar
- 4 Eggs - Slightly Beaten
- 1/3 Cup Corn Startch
- 2 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 Cup butter or margarine, melted
- 16 oz Sour Cream

Preparation
Step 1
Pre-heat oven to 325 degrees. Grease a 9-inch springform pan, and in a bowl mix in graham cracker crumbs with 4 TBS Sugar and 1/2 stick of soft butter or margarine ( 1/2 cup) then press in the bottom and up sides of your spring form pan.
Step 2
In large mixing bowl, mix cottage cheese and cream cheese together at high speed until well blended and creamy. Then add sugar and eggs. Reduce speed to low, and add cornstarch, lemon juice and vanilla.
Add melted butter and Mix - now by hand fold in the sour cream. ( You don't want to beat in the sour cream)
Step 3
Pour batter into prepared pan. Bake for 1 hour and 10 minutes, until firm and starting to brown around edges. (the cake will rise above pan, then settle back down). It does crack on top, even with a pan of water placed in the oven.
Step 4
Turn oven off, but let cake stand in the oven for 2 hours. Remove from oven, and cool completely on a wire rack. Remove from oven, cover with foil and Chill in fridge for at least 2 hours.
** The cake will crack on the top, this is normal and you know you did it right ** Covers great with your toppings
Step 5
Remove from pan, and top with your favorite toppings. Strawberries, Cherries, Blue Berries or you can do a turtle topping with mantled caramel, chocolate and add in crushed heath candy or recees peanut butter cups. Enjoy
