Ingredients

  • 1/2 lb bacon
  • 1 medium red onion, cut into 1/4-inch pieces
  • 3 celery ribs, cut into 1/4-inch pieces
  • 4 tbsp. butter
  • 1 cup flour
  • 2 cups chicken stock
  • 4 cups milk
  • 3/4 lb cheddar cheese
  • 1 tbsp. Tabasco sauce
  • 1 tbsp. Worcestershire sauce
  • Salt & pepper to taste
  • 1/2 cup warm beer

Preparation

Step 1

In a dutch oven, cook bacon 4-5 minutes on medium heat, or until browned.

Step 2

Add red onion, celery, & butter and saute for 5 minutes.

Step 3

Add flour and cook, stirring constantly, for 4 minutes over medium heat.

Step 4

Add chicken stock and bring to boil for 1 minute. Reduce heat to simmer and cook 15 minutes.

Step 5

Add milk and continue simmering for 15 minutes.

Step 6

Remove from heat. Stir in cheese, Tabasco, Worcestershire, salt, and pepper until cheese is melted

Step 7

Stir in warm beer.

Step 8

Serve hot.
