Baked oatmeal that is tasty and warm for a hearty breakfast or good for putting into yogurt to make a parfait.

Ingredients
- 1/3 c. butter, melted
- 2 large eggs
- 3/4 c. brown sugar
- 1 1/2 t. baking powder
- 1 1/2 t. vanilla
- 1 t. cinnamon
- 1/4 t. salt
- 1 c. milk
- 2 T. milk
- 3 c. oatmeal (regular or quick cooking)

Preparation
Step 1
Grease 1 1/2 quart baking dish. .
Step 2
Drop in eggs and beat well.
Step 3
Add brown sugar, baking powder, vanilla, cinnamon and salt. Mix well until no lumps.
Step 4
Whisk in butter and both measures of milk.
Step 5
Add oats and stir well. Refrigerate overnight.
Step 6
In morning.....preheat oven to 350 degrees. Bake, uncovered at 350 degrees for 35-45 minutes or until set in the middle. Serve hot. Refrigerate leftovers.
