Ingredients

  • 6 Medium Potatoes, peeled and diced
  • 2 Carrots, peeled and diced
  • 3 Celery stalks, diced
  • 2 quarts water
  • 6 Tbsp. Margarine
  • 1 Onion, chopped
  • 6 Tbsp. All Purpose Flour
  • Salt to Taste
  • 1 tsp Pepper
  • 1 1/2 Cups of Milk
  • 1 Cups Shredded Cheese

Preparation

Step 1

In a large pot cook potatoes, onions, carrots, and celery in water till tender. Drain, reserving liquid and setting aside veggies.

Step 2

In same pot, melt margarine and add flour, stir till smooth. Add 1 Cup or more of the reserved liquid and stir well. Add Milk. Stir in vegetables.

Step 3

Heat through. Just before serving add 1 Cup Cheese. Let Melt.
