Ingredients

  • 1/4 cup of butter or margarine
  • 2/3 cup of packed brown sugar
  • 9 slices of pineapple (drained)
  • 9 maraschino cherries (without stems)
  • 1 1/3 cups of all purpose flour
  • 1 cup of sugar
  • 1/3 cup of shortening
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 3/4 cup of milk
  • 1 egg

Preparation

Step 1

Preheat oven to 350 degrees. In a 9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in the center of every pineapple slice.

Step 2

In a bowl, beat remaining ingredients with a mixture on low speed for 30 seconds, scraping the bowl constantly. Beat on high for 3 minutes, scraping the bowl occasionally. Pour batter over pineapple and cherries.

Step 3

Bake for 50-55 minutes, or until tooth pick is inserted comes out clean. Immediately place heatproof serving plate upside down over pan, turn plate and pan over. Leave pan over cake for a few minutes so brown sugar mixture and drizzle over cake. Remove pan and serve warm. Store cake loosely covered.
