Ingredients

  • 1/2 cup brown sugar Splenda
  • 2/3 cup margarine - soft
  • 1 large egg
  • 1t vanilla extract
  • 2 cups old fashioned oats
  • 1-1/2 cups whole wheat flour
  • 1t baking soda
  • 1t pumpkin pie spice
  • 1/2t cinnamon
  • 2/3 cup raisins
  • 1/2 cup chocolate chips
  • 1/3 cup walnuts
  • 1/2 cup

Preparation

Step 1

Beat sugar and margarine until fluffy, add egg and vanilla and beat until blended.
Whisk together flour, baking soda and spices in separate bowl, then add to wet ingredients. Add oats and mix together. Add raisins, chocolate chips and nuts.
Mix until combined.

Step 2

Place dough by the teaspoonful on cookie sheets lined with parchment paper.
Use 2 cookie sheets - about 16 per sheet.

Step 3

Bake in 400 degree F. oven for approx 7 minutes.
Remove from oven when bottoms of cookies are browned and tops are firm to the touch.

Step 4

Cool on wire racks, then store in cookie tin.
Also freeze well.

May substitute other types of nuts
