2 Hour Buns

Quick, easy and delicious! This is a recipe that I have tweaked and adapted and has become quite popular for our family get togethers and pot lucks.

- 1 tbsp active dry yeast
- 1 cup very warm water
- 1 tsp sugar
- 1/2 cup shortening
- 1/2 cup sugar
- 1 tsp salt
- 1 egg
- 1 cup boiling water
- 5-5 1/2 cups flour

Step 1
Disslove the 1 tsp sugar in 1 cup very warm water. Sprinkle the yeast over top and let set for 10 minutes.
Combine shortening, 1/2 cup sugar and the salt in a large bowl. Add boiling water, then add the egg, mixing well after each addition. Add the yeast mixture and mix well. Stir in 5 cups flour, and use your hands to combine when it gets too stiff to stir. Add more flour if needed to make a nice, elastic dough. Turn dough out onto floured surface and knead until smooth and no longer sticky.
Place dough into oiled bowl, turning to coat, and cover with a tea towel. Allow to rise in a warm place 45-60 minutes or until doubled in size.
Punch down dough and shape into two loaves and place into two well greased 9 x 5 inch loaf pans or shape into 18 rolls and place into well greased muffin pans. Cover with tea towel and allow to rise again in warm place until doubled in size.
Bake loaves in preheated 350 degree oven for 20-30 minutes or until the loaf sounds hollow when tapped on the bottom and they are a nice golden colour. For buns bake 15-20 minutes or until they are a nice golden colour.
VARIATIONS: You can add in 1 cup raisins, dried candied fruit or shredded cheese that has been coated with some of the flour at the same time as you add the flour.
Brush tops of bread or buns with melted butter if desired.
Bake the buns in a 9 x 13 inch pan for softer edges.
You can also roll out the dough and use it to make cinnamon buns!
