Jean's Clafouti with 'Bing' Sour Cherries

An easy dessert originating from France. Many different fruits may be used. My favorite are 'Bing' cherries. Leave it to the French to create scrumptious from simplicity!

Ingredients

  • 1 1/4 C. Flour
  • 1 tsp. oil
  • 4 eggs
  • 1/4 C. sugar
  • 12 oz. (500 gr.) pitted Bing or Montmorency sour cherries
  • 2 Tbsp. soft butter
  • 1 C. warm milk
  • 1/4 tsp. cinnamon
  • 1/4 tsp. vanilla
  • a pinch of salt
  • icing sugar

Preparation

Step 1

Total Time: 1 hr 5 min.
Prep: 15 min.
Cook: 50 min.

Strain liquid from cherries and discard the liquid.
In a large mixing bowl, blend sugar and eggs with hand mixer.

Add the flour and mix until blended. Add the warm milk, cinnamon, vanilla and a pinch of salt. Mix until blended.

Step 2

Grease a 8x8 pyrex dish or a 13 in. round dish with 2 tablespoons of soft butter. Spread cherries evenly on the bottom of the pan. Pour the batter gently over the cherries.

Bake for 45 minutes or until the cake is sponge like. May take longer depending on your oven. Remove from the oven and cool for 5 minutes before serving. Serve warm. Garnish with powdered sugar. Makes 6 servings.

Cherries come in a can or a jar. Can be found in the International section of the grocery store.

I use a small hand strainer to dust the Clafouti with icing sugar.

You can bake the Clafouti in a 9x13 pyrex pan, it comes out thinner but just as good!
