Ho Ho Ho Cranberry Muffins

Ingredients

  • 1/2 c whole cranberry sauce
  • 2 tsp shredded orange rind
  • 1 1/2 c flour
  • 1/2 c sugar
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp each baking powder and salt
  • 1 slightly beaten egg
  • 1 c shredded peeled and diced apple
  • 1/3 c milk
  • 1/3 c vegetable oil
  • 1/2 c icing sugar
  • 2-3 tsp orange juice

Preparation

Step 1

Combine cranberry sauce and peel. Set aside. Combine flour, sugar, cinnamon, sofa, baking powder and salt in bowl. make a well in center. Combine egg, apple, milk and oil and pour into well. Stir just to moisten. fill greased 2 1/2 inch muffin tins half full. Make a well in each center with a spoon and put 2 tsp of cranberry mixture into each well. bake at 375F for 18-20 Min. combine orange juice and icing sugar and make a runny glaze. Drizzle glaze over warm muffins. makes 12
