Ingredients

  • 1/8 - 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried parsley
  • Salt and pepper to taste
  • 4 - 5 large potatoes, peeled and cubed
  • Optional: Parmesan cheese, sprinkle of crushed red pepper

Step 1

Preheat oven to 425 degrees. In a large bowl, combine oil, garlic and all seasonings together. Stir in the potatoes to coat. Place the potatoes on a roasting pan or baking sheet in a single layer. Roast for 15 minutes; turn over and finish cooking them another 15 - 20 minutes until brown on all sides. Yummy!
