Ingredients
- 1 cup sugar
- 1/2 cup butter or margarine
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp grated lemon peel (or 1/2 tsp lemon juice)
- 1/4 tsp salt
- Cinnamon Sugar:
- 1/4 cup sugar
- 1 tsp ground cinnamon

Preparation
Step 1
In a mixer bowl, cream together sugar and butter. Beat in egg and vanilla. (if using lemon juice add in here).
Step 2
Combine flour, cinnamon, baking powder, lemon peel (if using) and salt. Add to butter mixture. Blend well.
Step 3
Cover and refrigerate 2 hours or until firm.
Step 4
Shape dough into small balls, about ¾-inch in diameter. Roll in cinnamon sugar to coat.
Step 5
Set cookies, 1-inch apart, on lightly greased cookie sheets (or parchment paper).
Step 6
Bake at 350°F for 10 minutes or until edges are lightly browned.
Step 7
Cool slightly on pans, then remove to racks to cool completely.
