What makes this banana bread so delicious is the use of very dark ripe bananas, the large amount of baking soda and the long bake time at a low temperature. You end up with a lovely dark banana bread.

Ingredients

  • 3 medium very ripe bananas (the darker the better)
  • 1 C. sugar
  • 3 tsp. baking soda
  • dash of salt
  • 2 eggs
  • 1/4 C. oil
  • 1 1/2 C. flour
  • 1/2 C. buttermilk or sour milk

Preparation

Step 1

Beat/process bananas until pureed. You should have 1 cup of bananas.
Add sugar, soda and salt and blend well.
Add eggs and oil and process until blended.
Pour flour over mixture, then add the buttermilk or sour milk.
Process until smooth.

Step 2

Line a 9x5 loaf pan with parchment paper or aluminum foil.
Pour in the batter.
Bake on middle rack in oven at 275F for about 2 1/2 hrs., or until loaf tests done.

To make sour milk - 1 tsp. lemon juice plus milk to equal 1/2 cup.

You can use a hand mixer or food processor for this recipe.

Freezes well.
