Ingredients

  • 1 cup gluten free all purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup fresh or frozen blue berries
  • 1 large egg
  • 1/3 cup milk
  • 2 tablespoons butter melted

Preparation

Step 1

preheat oven to 350 f line 6 muffin cups
whisk together flour,sugar,baking powder,salt and nutmeg in bowl
toss blueberries with 2 tablespoons of flour mixture in a seperate bowl
lightly beat egg in sm bowl then whisk in milk,stir egg mixture into flour mixture,stir in butter then fold in blueberries. divide into prepared muffin cups

Bake 20-25 mins or until lightly brown on top or toothpick comes out clean
