- 3 tbsp butter
- 1 onion, chopped
- 1 clove garlic, finely chopped
- 1 lb fresh mushrooms, sliced
- 1/4 cup all purpose flour
- 3 cups chicken stock
- 2 cups milk
- 1/4 tsp salt or more to taste
- 1/4 tsp I pepper
- 1 1/2 cups grated cheddar cheese

Step 1
1. Melt in large skillet or saucepan. Add onion and garlic. Cook

5. Add salt and pepper. Reduce sever and simmer gently for 15 min.
6. Puree soup. Return to pot.
7. Add Cheddar cook gently 2 min until cheese has just melted. Taste and seasoning if necessary. Serve, sprinkled with parsley and cheese
