Ingredients

  • 6 oz (1 1/2 cups) whole wheat flour
  • 3 oz (3/4 cup) all purpose (plain) flour
  • 4 oz (1/2 cup) butter
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • pinch ground allspice
  • pinch ground nutmeg
  • 4 oz (1/2 cup) dark brown sugar
  • 4 fl oz (1/2 cup) whole milk or soy milk
  • 6 oz (3/4 cup) pureed pumpkin (use canned if you can’t get hold of fresh

Preparation

Step 1

Preheat the oven to 375 deg F (180 deg C).
In a large bowl, combine the two types of flour, the baking powder and the salt with the spices and sugar.
Add the butter and rub it into the flour with the fingertips, until the mixture resembles bread crumbs.
In a small bowl, stir the milk into the pureed pumpkin until thoroughly combined.
Stir the pumpkin mixture into the flour mixture until the ingredients are just mixed.
Pumpkin sconesGather the dough together, turn out on to a floured board and shape into a circle.
Cut into wedges (as shown on the right).
Place the wedges separately on a greased baking sheet and bake for 20 to 30 mins until golden.
Cool and serve warm – delicious with a cream cheese spread!
