  • • 1 1/2 pounds haddock or cod fillets, fresh or frozen
  • • 1 cup chicken broth
  • • 1/2 teaspoon salt
  • • dash ground black pepper
  • • 1/4 teaspoon sweet paprika
  • • 1 1/2 cups diced peeled potato
  • • 3/4 cup diced carrots
  • • 1 small onion, finely chopped
  • • 2 tablespoons butter
  • • 2 tablespoons flour
  • • 2 cups milk

Preparation

Step 1

Cut fish fillets into small pieces; put in a large saucepan or kettle with chicken broth, seasonings, and potatoes and carrots.

Step 2

Cook, covered, for about 15 minutes, until vegetables are tender.

Step 3

In a medium saucepan, sauté onion in butter until tender.

Step 4

Stir in flour until well blended.

Step 5

Gradually add milk, stirring constantly. Continue stirring and cooking until thickened.

Step 6

Add to cooked vegetables and fish; continue cooking for about 5 to 10 minutes, stirring frequently.
