Ingredients
- 1)1 packet (250g) sponge fingers (you can replace with sponge cake split into 2 layers)
- 2)1 cup of strong coffee (for dipping sponge fingers)
- 3)1 Tbsp rum/brandy/marsala (Optional if serving to kids)
- 4)4 egg yolks
- 5)½ cup castor sugar
- 6)250g mascarpone cheese/cream cheese (Philadelphia block cream cheese)
- 7)300ml fresh cream
- 8)3 tsp gelatine
- 9)½ cup hot water
- 10)1 tsp Cocoa powder to dust
- 11)20cm diameter spring form tin (square tin layer with baking paper )

Preparation
Step 1
Combine coffee and rum in a bowl.
Step 2
Mix gelatine with hot water and stir until gelatine is fully dissolved.
Step 3
Whisk egg yolks and sugar in a bowl over a heated water pot until creamy (double boiling method to sterilise egg yolks).
Step 4
Using an electric mixer beat the cream cheese until smooth and pours in gelatine mixture and blends mixture to smooth. (Ensure gelatine mixture not too hot before pouring into cream cheese.).
Step 5
In a separate bowl, beat fresh cream until creamy but not too thick.
Step 6
Combine egg mixture, fresh cream into cream cheese mixture and cream together until smooth.
Step 7
Dip half the sponge fingers one at a time in coffee mixture. Arrange over the base of 20 X 20 cm square tin or 20cm diameter spring form tin, trimming to fit if necessary.
Step 8
Spread half the cheese mixture over sponge layer. Repeat the same step 7& 8 with remaining sponge fingers forming 2nd layer.
Step 9
Cover with aluminium foil and refrigerate at least 3hrs or overnight.
Step 10
Dust top with cocoa powder and cut into slices to serve.

Ingredients

- 12 oz (1 1/2 cups) mascarpone cheese
- 1/2 cup sour cream
- 1/2 cup icing sugar
Method
- Blend the strawberries to a pulp.
- Mix the mascarpone cheese, sour cream, and sugar.
- Crush the ginger biscuits.
- In a jar or bowl, layer the biscuits, the strawberries, and the cream mix (biscuits, part of cream mix, strawberries, and then another layer of cream mix).
- Top off with a fresh sliced strawberry and some ginger biscuit crumbs.
