Ingredients

  • 3 eggs, lightly beaten
  • 2 c. salsa, divided
  • 1 can (16 oz) kidney beans, rinsed and drained
  • 1 can (11 oz) Mexicorn, drained
  • 1 medium onion, chopped
  • 3/4 c. dry bread crumbs
  • 1 pkg. taco seasoning
  • 1 t. ground cumin
  • 1 t. chili powder
  • 2 lbs. ground beef
  • 2 c. shredded cheddar cheese
  • additional salsa, optional

Preparation

Step 1

In a large bowl, combine eggs, 1/2 c. salsa, beans, corn, onion, bread crumbs, seasonings and spices. Crumble beef over mixture and mix well.

Step 2

Pat into two ungreased 9x5 loaf pans. Bake, uncovered, at 350 degrees for 50-55 min or until meat thermometer reads 160 degrees.

Step 3

Spoon remaining salsa over each meat loaf; sprinkle with cheese. Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with additional salsa.
