Ingredients

  • 13’’x9’’ Pan
  • 2 cups flour
  • 2 tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 cups sugar
  • ½- ¾ cup oil ( we use ½)
  • 4 eggs
  • 2 cups grated carrot
  • 1 ¼ cups drained crushed pineapple
  • 1 cup chopped nuts ( optional)
  • Whipped Cream Cheese Frosting’
  • 1 1/2 cups heavy whipping cream ( just used regular whipping cream found in stores)
  • 3/4 cup powdered sugar
  • 1 (8 ounce) package cream cheese
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon kosher salt

Preparation

Step 1

- Measure flour, soda, powder, salt and cinnamon into bowl.

Step 2

-Add sugar, oil and eggs and beat hard by hand one minute.

Step 3

-Add carrot, pineapple, and nuts to mixture and beat. Batter is quite moist.

Step 4

-Grease bottom of pan and dust with flour. Pour in batter and bake at 350 F for 35 mins at least, or until gently touched in middle, fingerprint does not remain ( or til toothpick comes out clean).. Cool and frost

Step 5

For frosting :

-In a bowl of stand mixer with the whisk attachment, mix the heavy whipping cream on high
speed until stiff peaks form. Put the whipped cream in another bowl and set aside.

Step 6

-In the bowl of a stand mixer with the paddle attachment, add in the powdered sugar, cream cheese, vanilla extract and kosher salt and mix on medium speed for about 4 minutes until smooth.

Step 7

-Add l/3 of the whipped cream to the cream cheese mixture and gently fold it in. Add in another
1/3 of the whipped cream and fold it in. Add in the remaining whipped cream and fold it in.
Take your time folding the whipped cream into the cream cheese mixture.
