Ingredients

  • 2 cups shredded zucchini with skin ( 1 medium zucchini is approx 1 cup grated )
  • 1 cup oil
  • 3 eggs
  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp vanilla
  • 1/2 cup chopped walnuts
  • 1 tsp salt
  • 2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Preparation

Step 1

- Mix the 1 cup oil with the zucchini and set aside while measuring out the other ingredients.

Step 2

- Mix the dry ingredients together first in a bowl, set aside.

Step 3

- Mix the zucchini ( with the oil mixed into it), eggs, sugar, and vanilla together.

Step 4

- Slowly ( about a 1/3rd at a time) add the dry ingredients into the wet.

Step 5

- Line 2 loaf pans with parchment paper and butter ( or spray them).

Step 6

- Bake at 350 F for 1 hour ( til toothpick comes out clean).
