Ingredients

  • 2 3/4 cups sifted flour
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 4 egg whites
  • 1 1/2 cups sugar
  • 3/4 cup butter
  • 1 cup coconut milk
  • 1 tsp of each- vanilla and almond extract

Preparation

Step 1

Sift together bp, flour and salt 3 times.
Preheat oven 350•
Prepare pan(s).

Step 2

In a bowl beat egg whites until foamy, gradually add 1/2 cup of sugar, continue beating until stiff peaks.

Step 3

Cream butter and remaining sugar until fluffy. Add sifted ingredients alternating with the milk, beating after each addition, until smooth. Add flavorings and meringues and beat thoroughly into the batter.

Step 4

Bake for 30-35 minutes at 350•

Step 5

Cool cake in pan for 10 minutes before transferring to a wired rack.

Step 6

Ice cake with rosettes of whipped cream and garnish with shredded fresh coconut.
