Ingredients

  • Cupcakes:
  • 7/8 cup (or 14 tbsp) flour
  • 5/8 cup (or 10 tbsp) sugar
  • 1.2 tsp baking powder
  • 0.8 tsp baking soda
  • 1/2 cup + 1 tbsp butter
  • 3 egg yolks
  • 1 tsp almond extract
  • 6 tbsp + 1 tsp milk
  • 6.5 tbsp maple syrup
  • Buttercream:
  • 2/3 cup butter, softened
  • 4 cups icing sugar (not levelled)
  • 2tsp maple or vanilla extract
  • 3.5 tbsp buttermilk (or sour milk)
  • Pancakes:
  • 1 cup flour (not levelled)
  • 1 1/2 cup self rising flour
  • 1/3 tsp baking soda
  • 2/3 tsp baking powder
  • 1/3 tsp salt
  • 2 tbsp sugar
  • 2 eggs
  • 3/5 cup (or 9.5 tbsp) buttermilk (or sour milk)
  • 2 tbsp oil

Preparation

Step 1

Preheat oven to 365 F. Line your cupcake pan with wrappers. In large bowl cream your butter and sugar for 5 minutes. It should be light yellow, fluffy and grain free.

Step 2

On medium speed, add your egg yolks one at a time beating well in between each addition. Add your extract. Beat well once again. Mix your maple syrup and milk. Mix flour, baking soda, and baking powder in a another bowl.

Step 3

Alternate adding 1/3 of the flour mix and 1/3 milk mix into butter mixture. Pour into cupcake papers. Bake for 20-25 minutes. Leave to cool in the pan for 5 minutes then transfer to wire rack to cool.

Step 4

Cream butter in large bowl until very fluffy and almost white. Add your extract. On a slow speed beat one half of the sugar into the butter. Add your buttermilk. Beat again. Add the last bit of sugar and beat until fluffy and all ingredients are combined.

Step 5

In large bowl mix flour, salt, baking soda and baking powder. In separate bowl whisk the eggs, buttermilk, oil and sugar. Pour wet mix into the dry mix and fold until just combined.

Step 6

Heat a fry pan on medium. Using teaspoons drop batter into the pan and cook for 1-2 minutes on each side. Repeat until batter is finished.

Step 7

Take one cupcake and pipe buttercream to form a base. Next stick together three pancakes with extra buttercream and place onto base. Before serving drizzle with more maple syrup.
