Ingredients

  • 4 eggs
  • 4/5 cup (or12.5 tbsp) icing sugar
  • 1/2 cup sugar
  • 6.5 tbsp unsalted butter, softened
  • 1/2 cup slivered almonds
  • 1 cup desiccated coconut
  • 2 tbsp grated lemon rind
  • 2 tbsp grated orange rind
  • 1/2 cup lemon juice
  • 1/2 cup orange juice
  • 1 cup coconut milk
  • 1/2 cup flour

Preparation

Step 1

Preheat oven to 356 F.

Step 2

Place the eggs, sugars, butter, almonds, coconut, lemon and orange rind and juice, coconut milk and flour in a food processor and blend until well combined.

Step 3

Pour into a buttered 11 inch pie plate. Bake for 1 hour until lightly browned. Set aside to cool, then refrigerate for 1 hour to chill.
