BUFF Tasty Spinach Pancakes Recipe

Thaw and drain as much water out of spinach. Put in large bowl. In smaller bowl, mix eggs,onion, seasoning and bread crumbs. Pour over spinach and mix well. Fold in cheese last. Drop heaping Tablespoon onto heated pan. Press down and shape. Cook approximately 4-5 minutes each side. Want egg to cook thoroughly. Garnish with salsa! Yummy!!

- - 2 eggs
- - 1 cup bread crumbs.

Step 1

Add into a smaller separate mixing bowl and mix
- 2 eggs
- 1 cup bread crumbs.
- 1/2 cup shredded cheese
- dash of chopped onion, garlic & red pepper
Step 3
Add spinach and egg, bread crumb mix together in large bowl.
Step 4
Heat skillet on medium heat
Step 5
Shape pancakes into patty sized shape.
Step 6
Cook each side for 4-5 mins
Step 7
Remove and serve
