Cream Cheese Blanc Manger

Ingredients
- 1 and 3/4 cups Almond milk
- 4 oz Cream Cheese
- 1/3 cup Sugar
- 3 tablespoons Cornstarch
- 1/2 lb Fresh Strawberries, washed and hulled
- 1/4 cup Fresh Blueberries
- 2 tablespoons Granulated Sugar
Preparation
Step 1
Cut strawberries (reserve 1-2 into half. Cut the reserved strawberries into thinly slices. In a bowl, combine strawberries, blueberries and granulated sugar. Stir to coat well and set aside.
Step 2
In a sauce pan, put cream cheese, 1/3 cup sugar and 1 cup of almond milk. Heat over medium heat and stir until cream cheese is dissolved.
Step 3
Then add cornstarch and the rest of almond milk to the saucepan. Heat over medium heat and simmer stirring constantly until thickened. Then put into 6 inch cake pan and refrigerate for 2.5-3 hours or until set.
Step 4
Remove the blanc-manger from the cake pan. Put blueberries and strawberries on top.
