Ingredients

  • l pound of Italian bulk sweet Sausage
  • 2 Tbls Olive Oil
  • 1 medium Onion, diced
  • 4 Carrots, diced
  • 5 Potatoes, peeled and diced
  • 2 cloves of Garlic, minced
  • 1 Bay Leaf
  • 2 cans of White Beans, drained
  • Salt and Pepper to taste
  • 4 C of chopped fresh Spinach, Kale, or Broccoli Rabe
  • 2 quarts of Chicken Stock

Preparation

Step 1

Heat soup pot over medium heat and add olive oil and sausage and cook until brown. Add veggies, bay leaf, beans and salt/pepper. Slow cook for about 5 minutes until veggies start to soften.
Add the Spinach (Rabe or Kale) and wilt.
Add the stock and bring to a boil. Once to a boil. lower heat to a simmer and let cook 15 minutes. Serve with grated Parmesan or Romano cheese (fresh), for topping.
