Ingredients

  • 2 C sugar
  • 4 eggs
  • 1 1/4 C oil
  • 2 C flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 3 baby food jars of carrots
  • 1 tsp vanilla
  • Frosting:
  • 4 oz Cream Cheese, softened
  • 1/4 C Butter, softened
  • 1 3/4 C Powdered Sugar
  • 1/2 tsp Vanilla

Preparation

Step 1

Preheat oven to 350. Grease and flour 9 X 13 pan.

Step 2

Cream together eggs, sugar and oil. Add flour, baking soda, cinnamon and salt. Mix well. Fold in jars of baby food and vanilla until blended. Pour into pan and bake for 35-45 minutes.

Step 3

Prepare frosting and spread over cake when cooled. Store in airtight container in the refrigerator.
