Chicken Quesadillas

The zesty chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with sour cream and salsa.

Ingredients
- 1 pound skinless, boneless chicken breast, diced
- 1 (1.27 ounce) packet fajita seasoning
- 1 tablespoon vegetable oil
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1 onion, chopped
- 10 (10 inch) flour tortillas
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese

Preparation
Step 1
Heat a skillet on med/high with a bit of oil and toss in the chicken with with fajita seasoning. Sauté until almost cooked.
Step 2
Stir in the green bell peppers, red bell peppers, and onion. Cook and stir until the vegetables have softened, about 10 minutes.
Step 3
Brush each tortilla with a bit of oil and place one on a frying pan on medium heat.
Step 4
Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese and Monterey Jack. Fold the tortillas in half and Cook for about 4 min each side until crispy and cheese is melted.
Step 5
Remove from pan and repeat with the other tortillas.
To make own fajita seasoning combine 3 Tbsp. cornstarch 2 Tbsp. chili powder 1 Tbsp. salt 1 Tbsp. paprika 1 Tbsp. sugar 2-1/2 tsp. crushed chicken bouillon cube 1-1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp cayenne pepper 1/4 tsp. crushed red pepper flakes 1/2 tsp. This Makes the equivalent of 3 packets of commercial Fajita Seasoning Mix.
